Every morning lately I've been starting my day with a heaping glass full of this drink. I'm always trying to get as many veggies as possible and having this smoothie on hand is a great way to reach into the fridge anytime for a healthy snack. Keeping it a smoothie keeps in all the incredible fiber. Trust me, I'm not someone who'll drink spinach (unless my boyfriend manages to sneak a few leaves in there) so don't worry- this drink remains sweet. The sweetness of the beets along with the tartness of the apples (I recommend granny smith but any apple will do) and the bite of the ginger really help you blend in those more intense leafy greens (Kale). Blueberries (besides being rich in antioxidants) are just darn good!
